Vegan Pumpkin Bars recipe

🎃 Vegan Pumpkin Bars
Yields: 12 bars

Ingredients
1 ½ cups all-purpose flour (or gluten-free flour blend)
1 tsp baking powder
½ tsp baking soda
1 tsp ground cinnamon
½ tsp ground ginger
¼ tsp ground nutmeg
¼ tsp ground cloves
½ tsp salt
1 cup pumpkin puree (canned or fresh)
½ cup brown sugar or coconut sugar
½ cup maple syrup
¼ cup neutral oil (canola, avocado, or melted coconut oil)
1 tsp vanilla extract
½ cup unsweetened plant milk (almond, oat, soy)
Optional Topping (Creamy Vegan Frosting)
½ cup vegan cream cheese
2–3 tbsp powdered sugar
1 tsp vanilla extract
Instructions
Preheat oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
In a large bowl, whisk together flour, baking powder, baking soda, cinnamon, ginger, nutmeg, cloves, and salt.
In another bowl, mix pumpkin puree, brown sugar, maple syrup, oil, vanilla, and plant milk until smooth.
Pour wet ingredients into dry and stir until just combined (don’t overmix).
Pour batter into prepared pan and smooth the top.
Bake for 30–35 minutes or until a toothpick inserted in the center comes out clean.
Let cool completely before frosting.
For frosting: Beat vegan cream cheese with powdered sugar and vanilla until creamy. Spread over cooled bars.
Cut into squares and serve.
