vegan peanut butter rice crispy bars (no bake)

Ingredients
1 cup peanut butter
6 tablespoons maple syrup
1 tsp vanilla
Pinch salt
3 cups crispy brown rice cereal
For chocolate coating
1 cup dairy free chocolate chips ( mixed with 1/4 cup maple syrup and add a little almond milk).
Melt peanut butter and maple syrup together in microwave safe bowl for about 30 seconds. Add to large bowl with vanilla and salt. Stir in crispy rice cereal. Press firmly into parchment paper lined 8×8 pan. Melt chocolate in 30 second increments, taking out to stir, until fully melted. Pour over rice crispy bars evenly, tilting pan to do so if needed. Chill for 30 minutes until firm.
