Vegan Peach Cobbler
Ingredients:
For the Filling:
- 4 cups fresh or canned peaches, sliced (if using canned, make sure they are in 100% juice)
- 1/2 cup granulated sugar
- 2 tablespoons cornstarch
- 1 teaspoon pure vanilla extract
- 1/2 teaspoon ground cinnamon
- 1/4 teaspoon salt
- For the Topping:
- 1 cup all-purpose flour
- 1/2 cup granulated sugar
- 1 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup unsweetened almond milk (or any plant-based milk)
- 1/4 cup vegetable oil
- 1/2 teaspoon pure vanilla extract
- Instructions:
- 1. Preheat Your Oven:
- Preheat your oven to 350°F (175°C).
- 2. Prepare the Filling:
- In a mixing bowl, combine the sliced peaches, granulated sugar, cornstarch, pure vanilla extract, ground cinnamon, and salt. Stir well to coat the peaches evenly.
- Transfer the peach mixture into a greased 9×9-inch (23×23 cm) baking dish.
- 3. Make the Topping:
- In another mixing bowl, whisk together the all-purpose flour, granulated sugar, baking powder, and salt.
- Add the unsweetened almond milk, vegetable oil, and pure vanilla extract to the dry ingredients. Stir until just combined, being careful not to overmix.
- 4. Assemble the Cobbler:
- Pour the cobbler topping over the peach filling in the baking dish, spreading it out evenly.
- 5. Bake:
- Place the baking dish in the preheated oven and bake for 45-50 minutes or until the topping is golden brown, and the peach filling is bubbling.
- 6. Serve:
- Let the cobbler cool for a few minutes before serving. Serve warm as is or with a scoop of vegan vanilla ice cream for an extra treat.
