Vegan Pancakes

Ingredients


1 1/4cup flour
1/2 cup pumpkin purée
1/4 cup applesauce
1tsp baking powder
1/4tsp salt
2TBS brown sugar
1TBS maple syrup (optional)
1Tbs pumpkin spice
1/2 cup water
1/2 cup coconut milk
**** If making gluten free, swap out the flour for gluten free flour blend, add 2 more teaspoon baking powder and add 2tsp vinegar + 1 teaspoon psyllium husk or xanthan gum
Instructions: combine dry ingredients, set aside. In a larger bowl add sugar with all other wet ingredients, stir in dry ingredients careful to not over mix… cook like regular pancakes.
** I used earth balance butter**
