Vegan Mushroom Stroganoff with Creamy Mash

Ingredients:
For the Mushroom Stroganoff:
- 2 tbsp olive oil
- 1 large onion, finely chopped
- 3 garlic cloves, minced
- 500g (1 lb) mixed mushrooms (e.g., cremini, portobello, shiitake), sliced
- 1 tsp smoked paprika
- 1 tsp dried thyme
- 2 tbsp soy sauce or tamari
- 1 cup vegetable broth
- 1 cup coconut milk or cashew cream
- 1 tbsp Dijon mustard
- 2 tbsp nutritional yeast (optional, for a cheesy flavor)
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
For the Creamy Mash:
- 1 kg (2.2 lbs) potatoes, peeled and chopped
- 2-3 tbsp vegan butter or olive oil
- 1/2 cup unsweetened plant-based milk (e.g., almond, soy, oat)
- Salt and pepper to taste
Instructions:
1. Prepare the Creamy Mash:
- Place the potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender (about 15-20 minutes).
- Drain the potatoes and return them to the pot. Add the vegan butter (or olive oil) and mash until smooth.
- Gradually add the plant-based milk, mashing until the potatoes reach your desired creamy consistency.
- Season with salt and pepper to taste. Keep warm.
2. Prepare the Mushroom Stroganoff:
- In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes).
- Add the minced garlic and cook for another minute.
- Add the sliced mushrooms and cook until they release their moisture and start to brown (about 8-10 minutes).
- Stir in the smoked paprika and dried thyme, cooking for another minute.
- Add the soy sauce (or tamari), vegetable broth, and coconut milk (or cashew cream). Stir well to combine.
- Bring the mixture to a simmer and let it cook for about 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly.
- Stir in the Dijon mustard and nutritional yeast (if using). Season with salt and pepper to taste.
- If the sauce is too thick, add a bit more vegetable broth or plant-based milk to reach your desired consistency.
3. Serve:
- Serve the mushroom stroganoff over a generous helping of creamy mash.
- Garnish with freshly chopped parsley.
