Vegan Mushroom Stroganoff with Creamy Mash

Ingredients:

For the Mushroom Stroganoff:

  • 2 tbsp olive oil
  • 1 large onion, finely chopped
  • 3 garlic cloves, minced
  • 500g (1 lb) mixed mushrooms (e.g., cremini, portobello, shiitake), sliced
  • 1 tsp smoked paprika
  • 1 tsp dried thyme
  • 2 tbsp soy sauce or tamari
  • 1 cup vegetable broth
  • 1 cup coconut milk or cashew cream
  • 1 tbsp Dijon mustard
  • 2 tbsp nutritional yeast (optional, for a cheesy flavor)
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

For the Creamy Mash:

  • 1 kg (2.2 lbs) potatoes, peeled and chopped
  • 2-3 tbsp vegan butter or olive oil
  • 1/2 cup unsweetened plant-based milk (e.g., almond, soy, oat)
  • Salt and pepper to taste

Instructions:

1. Prepare the Creamy Mash:

  1. Place the potatoes in a large pot and cover with water. Add a pinch of salt and bring to a boil. Cook until the potatoes are tender (about 15-20 minutes).
  2. Drain the potatoes and return them to the pot. Add the vegan butter (or olive oil) and mash until smooth.
  3. Gradually add the plant-based milk, mashing until the potatoes reach your desired creamy consistency.
  4. Season with salt and pepper to taste. Keep warm.

2. Prepare the Mushroom Stroganoff:

  1. In a large skillet, heat the olive oil over medium heat. Add the chopped onion and sauté until translucent (about 5 minutes).
  2. Add the minced garlic and cook for another minute.
  3. Add the sliced mushrooms and cook until they release their moisture and start to brown (about 8-10 minutes).
  4. Stir in the smoked paprika and dried thyme, cooking for another minute.
  5. Add the soy sauce (or tamari), vegetable broth, and coconut milk (or cashew cream). Stir well to combine.
  6. Bring the mixture to a simmer and let it cook for about 10-15 minutes, allowing the flavors to meld and the sauce to thicken slightly.
  7. Stir in the Dijon mustard and nutritional yeast (if using). Season with salt and pepper to taste.
  8. If the sauce is too thick, add a bit more vegetable broth or plant-based milk to reach your desired consistency.

3. Serve:

  1. Serve the mushroom stroganoff over a generous helping of creamy mash.
  2. Garnish with freshly chopped parsley.
  3. Enjoy your comforting and delicious vegan meal!
