🥔 Vegan Mississippi Mud Potatoes

What Are They?
Traditionally, this dish includes potatoes, bacon, cheese, and sour cream — all baked into a bubbling, golden casserole. This vegan version hits all the same savory notes, using whole-food ingredients and dairy-free swaps.
🌱 Ingredients:
- 4 cups potatoes, diced (Yukon Gold or red work best)
- 1 tbsp olive oil
- ½ tsp salt, plus more to taste
- ½ tsp black pepper
- 1 tsp smoked paprika
- ½ cup vegan bacon bits (store-bought or homemade*)
- 1 cup vegan shredded cheddar cheese
- ½ cup vegan sour cream (see easy homemade version below)
- 2 green onions, sliced
- 2 cloves garlic, minced (optional for added depth)
🧄 Optional Easy Vegan Sour Cream:
Mix together:
- ½ cup plain unsweetened plant-based yogurt
- 1 tbsp lemon juice
- ½ tsp apple cider vinegar
- Pinch of salt
Let it sit 5–10 mins before using.
🔥 Instructions:
- Preheat oven to 400°F (200°C). Lightly grease a baking dish (8×8 or similar size).
- In a large bowl, toss diced potatoes with olive oil, salt, pepper, paprika, and garlic (if using).
- Transfer to a baking dish and roast uncovered for 25–30 minutes, or until potatoes are tender and lightly golden.
- Remove from oven and gently stir in vegan sour cream, vegan bacon, and ½ cup vegan cheese.
- Sprinkle remaining ½ cup cheese on top.
- Return to oven and bake for another 10–15 minutes, until bubbly and golden on top.
- Remove from oven, sprinkle with green onions, and let cool for a few minutes before serving.
