🥔 Vegan Mississippi Mud Potatoes

What Are They?

Traditionally, this dish includes potatoes, bacon, cheese, and sour cream — all baked into a bubbling, golden casserole. This vegan version hits all the same savory notes, using whole-food ingredients and dairy-free swaps.


🌱 Ingredients:

  • 4 cups potatoes, diced (Yukon Gold or red work best)
  • 1 tbsp olive oil
  • ½ tsp salt, plus more to taste
  • ½ tsp black pepper
  • 1 tsp smoked paprika
  • ½ cup vegan bacon bits (store-bought or homemade*)
  • 1 cup vegan shredded cheddar cheese
  • ½ cup vegan sour cream (see easy homemade version below)
  • 2 green onions, sliced
  • 2 cloves garlic, minced (optional for added depth)

🧄 Optional Easy Vegan Sour Cream:

Mix together:

  • ½ cup plain unsweetened plant-based yogurt
  • 1 tbsp lemon juice
  • ½ tsp apple cider vinegar
  • Pinch of salt
    Let it sit 5–10 mins before using.

🔥 Instructions:

  1. Preheat oven to 400°F (200°C). Lightly grease a baking dish (8×8 or similar size).
  2. In a large bowl, toss diced potatoes with olive oil, salt, pepper, paprika, and garlic (if using).
  3. Transfer to a baking dish and roast uncovered for 25–30 minutes, or until potatoes are tender and lightly golden.
  4. Remove from oven and gently stir in vegan sour cream, vegan bacon, and ½ cup vegan cheese.
  5. Sprinkle remaining ½ cup cheese on top.
  6. Return to oven and bake for another 10–15 minutes, until bubbly and golden on top.
  7. Remove from oven, sprinkle with green onions, and let cool for a few minutes before serving.
