Vegan Mexican Lasagna

Ingredients:

For the Filling:

  • 1 tablespoon olive oil
  • 1 onion, finely chopped
  • 2 bell peppers (any color), diced
  • 2 cloves garlic, minced
  • 1 can (15 oz) black beans, drained and rinsed
  • ONE cup corn kernels (fresh or frozen)
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • Salt and black pepper to taste

For the Sauce:

  • 2 cups tomato sauce
  • 1 teaspoon ground cumin
  • 1 teaspoon chili powder
  • 1/2 teaspoon garlic powder
  • Salt to taste

Additional Layers:

  • Corn tortillas
  • Vegan shredded cheese
  • Salsa
  • Fresh cilantro, chopped (for garnish)

Instructions:

  1. Preheat Oven:
    • Preheat your oven to 375°F (190°C).
  2. Prepare the Filling:
    • In a large skillet, heat olive oil over medium heat. Add chopped onion and diced bell peppers, sautéing until softened.
  3. Add Garlic and Spices:
    • Add minced garlic to the skillet and sauté for an additional minute until fragrant. Stir in ground cumin, chili powder, salt, and black pepper.
  4. Incorporate Black Beans and Corn:
    • Add drained black beans and corn kernels to the skillet, mixing well to combine. Cook for another 5 minutes until the mixture is heated through.
  5. Prepare the Sauce:
    • In a separate bowl, mix together tomato sauce, ground cumin, chili powder, garlic powder, and salt to create the sauce.
  6. Assemble the Lasagna:
    • In a baking dish, spread a thin layer of the tomato sauce on the bottom. Place a layer of corn tortillas on top, followed by a portion of the black bean and vegetable mixture. Drizzle some of the sauce over the filling and sprinkle vegan shredded cheese. Repeat the layers until you run out of ingredients, finishing with a layer of tortillas and sauce on top.
  7. Bake:
    • Cover the baking dish with foil and bake in the preheated oven for 25-30 minutes or until the lasagna is heated through and the cheese is melted.
  8. Garnish and Serve:
    • Remove the foil and bake for an additional 5-10 minutes until the top is golden brown. Garnish with fresh cilantro and serve the Vegan Mexican Lasagna hot.
