Vegan Meatloaf
Vegan Meatloaf
Ingredients:
- 1 cup rolled oats
- 1 cup cooked brown lentils
- 1 cup grated carrots
- 1/2 cup finely chopped onions
- 1/2 cup finely chopped mushrooms
- 1/4 cup tomato sauce
- 2 tablespoons olive oil
- 2 tablespoons soy sauce
- 1 teaspoon dried thyme
- 1 teaspoon dried basil
- 1 teaspoon dried oregano
- Salt and pepper to taste
- 1/2 cup breadcrumbs
- 1 tablespoon tomato paste
- 1/4 cup nutritional yeast
- 2 tablespoons flaxseed meal
Instructions:
- Preheat your oven to 375°F (190°C).
- In a large bowl, mix together the oats, lentils, carrots, onions, mushrooms, tomato sauce, olive oil, soy sauce, thyme, basil, oregano, salt, and pepper.
- Stir in the breadcrumbs, tomato paste, nutritional yeast, and flaxseed meal until well combined.
- Grease a 9×5 inch (23×13 cm) loaf pan and transfer the mixture to the pan.
- Bake for 45 minutes or until the top is golden brown.
- Let it cool for 10 minutes before slicing and serving.
Enjoy your delicious vegan meatloaf with a side of roasted vegetables or mashed potatoes. You can also use this recipe to make meatless meatball or burgers.
