Vegan Meatloaf

Vegan Meatloaf

Ingredients:

  • 1 cup rolled oats
  • 1 cup cooked brown lentils
  • 1 cup grated carrots
  • 1/2 cup finely chopped onions
  • 1/2 cup finely chopped mushrooms
  • 1/4 cup tomato sauce
  • 2 tablespoons olive oil
  • 2 tablespoons soy sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried basil
  • 1 teaspoon dried oregano
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs
  • 1 tablespoon tomato paste
  • 1/4 cup nutritional yeast
  • 2 tablespoons flaxseed meal

Instructions:

  1. Preheat your oven to 375°F (190°C).
  2. In a large bowl, mix together the oats, lentils, carrots, onions, mushrooms, tomato sauce, olive oil, soy sauce, thyme, basil, oregano, salt, and pepper.
  3. Stir in the breadcrumbs, tomato paste, nutritional yeast, and flaxseed meal until well combined.
  4. Grease a 9×5 inch (23×13 cm) loaf pan and transfer the mixture to the pan.
  5. Bake for 45 minutes or until the top is golden brown.
  6. Let it cool for 10 minutes before slicing and serving.

Enjoy your delicious vegan meatloaf with a side of roasted vegetables or mashed potatoes. You can also use this recipe to make meatless meatball or burgers.
