🍪 Vegan Maple Glazed Cookies
Ingredients
For the Cookies:
1 ½ cups all-purpose flour
½ cup coconut oil (solid but soft) or vegan butter
½ cup brown sugar or coconut sugar
¼ cup pure maple syrup
1 tbsp plant-based milk (almond, soy, oat, etc.)
1 tsp vanilla extract
½ tsp baking soda
¼ tsp salt
½ tsp cinnamon (optional, for extra warmth)
For the Maple Glaze:
½ cup powdered sugar
2–3 tbsp pure maple syrup
½ tsp vanilla extract
A splash of plant-based milk, if needed for consistency
👩🍳 Directions
Make the Cookies:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
In a mixing bowl, cream together the coconut oil (or vegan butter) and brown sugar until fluffy.
Add the maple syrup, plant milk, and vanilla and mix well.
In a separate bowl, whisk together the flour, baking soda, salt, and cinnamon.
Gradually add the dry ingredients to the wet ingredients and mix until a soft dough forms.
Scoop out tablespoon-sized portions, roll into balls, and slightly flatten them on the baking sheet.
Bake for 10–12 minutes, until the edges are lightly golden.
Let cool on the baking sheet for 5 minutes, then transfer to a wire rack.
Make the Glaze:
In a small bowl, whisk together the powdered sugar, maple syrup, and vanilla. Add a splash of plant milk if needed to thin it to a drizzle-able consistency.
Once cookies are cool, drizzle or dip them with the maple glaze.
Allow glaze to set before storing or serving.

Add chopped pecans or walnuts to the dough for a nutty twist.
Sprinkle with a pinch of sea salt before baking for a sweet/salty combo.
For a holiday touch, add a dash of nutmeg or cloves to the dough.
