Vegan lemon rice
Ingredients:
1 cup basmati rice
2 cups water
1 tablespoon coconut oil
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1/2 teaspoon turmeric powder
1/2 teaspoon salt
1/4 teaspoon black pepper
Juice of 1 lemon
1/4 cup roasted peanuts
1/4 cup chopped cilantro
Instructions:
Rinse the rice in cold water until the water runs clear. Drain and set aside.
In a large saucepan, heat the coconut oil over medium heat. Add the mustard seeds and cumin seeds and cook for 1-2 minutes, until the seeds start to pop.
Add the rice to the saucepan and stir to coat with the spices.
Add the water, turmeric powder, salt, and black pepper to the saucepan and stir to combine.
Bring the mixture to a boil, then reduce the heat to low, cover the saucepan, and simmer for 15-20 minutes, or until the rice is cooked and the water has been absorbed.
Remove the saucepan from the heat and stir in the lemon juice, roasted peanuts, and cilantro.
Serve the lemon rice hot or at room temperature.
