Vegan Kale pasta

Ingredients:

8 oz. pasta (your choice of shape)

1 bunch of kale, stems removed and leaves chopped

3 cloves garlic, minced

1/4 cup olive oil

Salt and pepper to taste

Lemon zest (optional)

Vegan Parmesan cheese (optional)

Instructions:

Cook the pasta according to package instructions until al dente. Drain and set aside.

In a large skillet, heat the olive oil over medium-high heat. Add the minced garlic and sauté for 1-2 minutes until fragrant.

Add the chopped kale to the skillet and sauté until wilted, about 5-7 minutes.

Add the cooked pasta to the skillet with the kale and garlic. Toss to combine.

Season with salt and pepper to taste. If desired, add a sprinkle of lemon zest and vegan Parmesan cheese for extra flavor.

Serve hot and enjoy!
