π Vegan Garlic Butter Mushrooms

π§Ύ Ingredients
- 2 tbsp vegan butter (or olive oil)
- 3β4 garlic cloves, finely minced
- 250g (about 2 cups) mushrooms, sliced (button, cremini, or mixed)
- 1 tbsp soy sauce or tamari (adds umami)
- 1 tsp lemon juice (or balsamic vinegar)
- 1 tbsp chopped fresh parsley (optional)
- Salt & pepper, to taste
- Optional: pinch of chili flakes or thyme
πͺ Instructions
- Heat the Pan:
- In a skillet over medium heat, melt the vegan butter.
- SautΓ© Garlic:
- Add minced garlic and cook for about 30 seconds until fragrant (donβt let it brown).
- Add Mushrooms:
- Toss in the mushrooms. Stir to coat in the garlic butter.
- Let them cook undisturbed for 2β3 minutes to brown, then stir occasionally for another 5β6 minutes until golden and tender.
- Season:
- Add soy sauce, lemon juice, salt, pepper, and optional herbs/chili flakes.
- Cook 1 more minute, stirring to deglaze the pan and coat mushrooms in the sauce.
- Finish & Serve:
- Sprinkle with fresh parsley and serve hot.
