🧾 Ingredients

  • 2 tbsp vegan butter (or olive oil)
  • 3–4 garlic cloves, finely minced
  • 250g (about 2 cups) mushrooms, sliced (button, cremini, or mixed)
  • 1 tbsp soy sauce or tamari (adds umami)
  • 1 tsp lemon juice (or balsamic vinegar)
  • 1 tbsp chopped fresh parsley (optional)
  • Salt & pepper, to taste
  • Optional: pinch of chili flakes or thyme

  1. Heat the Pan:
    • In a skillet over medium heat, melt the vegan butter.
  2. SautΓ© Garlic:
    • Add minced garlic and cook for about 30 seconds until fragrant (don’t let it brown).
  3. Add Mushrooms:
    • Toss in the mushrooms. Stir to coat in the garlic butter.
    • Let them cook undisturbed for 2–3 minutes to brown, then stir occasionally for another 5–6 minutes until golden and tender.
  4. Season:
    • Add soy sauce, lemon juice, salt, pepper, and optional herbs/chili flakes.
    • Cook 1 more minute, stirring to deglaze the pan and coat mushrooms in the sauce.
  5. Finish & Serve:
    • Sprinkle with fresh parsley and serve hot.
