Vegan Fudge Brownies with Salted Peanuts


Ingredients:
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1 cup granulated sugar
1/2 cup brown sugar
1/2 tsp baking powder
1/4 tsp salt
1/2 cup unsweetened applesauce (or 1/2 cup mashed banana)
1/2 cup plant-based milk (almond, soy, or oat)
1/2 cup melted coconut oil (or vegan butter)
1 tsp vanilla extract
1/2 cup vegan chocolate chips (optional)
1 cup lightly salted peanuts, roughly chopped
Instructions:
Preheat the Oven:
Preheat your oven to 350°F (175°C). Grease an 8×8 inch (or similar size) baking dish or line it with parchment paper.
Mix Dry Ingredients:
In a large bowl, whisk together the flour, cocoa powder, granulated sugar, brown sugar, baking powder, and salt until well combined.
Combine Wet Ingredients:
In another bowl, mix the applesauce, plant-based milk, melted coconut oil, and vanilla extract until smooth.
Combine Wet and Dry:
Pour the wet mixture into the dry ingredients and stir until just combined. Be careful not to overmix.
Add Chocolate Chips and Peanuts:
Fold in the vegan chocolate chips (if using) and chopped salted peanuts, reserving a few for topping.
Bake:
Pour the batter into the prepared baking dish and spread evenly. Sprinkle remaining peanuts on top.
Bake for 25-30 minutes:
Bake until the edges are firm and a toothpick inserted into the center comes out with a few moist crumbs (but not wet batter).
Cool and Serve:
Allow the brownies to cool in the pan for about 10-15 minutes before transferring to a wire rack to cool completely. Cut into squares and enjoy
