🍰 Vegan French Yogurt Cake

Ingredients:

  • 1 cup unsweetened plant-based yogurt (soy, almond, or coconut)
  • ½ cup maple syrup or cane sugar
  • ⅓ cup neutral oil (sunflower, canola, or light olive oil)
  • 1 tbsp lemon juice or apple cider vinegar
  • 1 tsp vanilla extract
  • 1 ½ cups all-purpose flour
  • 2 tsp baking powder
  • ¼ tsp baking soda
  • ¼ tsp salt
  • Optional: zest of 1 lemon or orange for flavor

👩‍🍳 Instructions:

  1. Preheat oven to 350°F (175°C). Lightly grease a loaf pan or 8-inch round cake pan and line with parchment paper.
  2. In a large bowl, whisk together:
    • Yogurt
    • Maple syrup (or sugar)
    • Oil
    • Lemon juice (or vinegar)
    • Vanilla extract
    • Citrus zest (if using)
  3. In a separate bowl, whisk:
    • Flour
    • Baking powder
    • Baking soda
    • Salt
  4. Gradually fold dry ingredients into wet until just combined. Do not overmix — a few small lumps are fine.
  5. Pour batter into prepared pan and smooth the top.
  6. Bake for 30–40 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
