Ingredients:
- 1 cup unsweetened plant-based yogurt (soy, almond, or coconut)
- Β½ cup maple syrup or cane sugar

cup neutral oil (sunflower, canola, or light olive oil)
- 1 tbsp lemon juice or apple cider vinegar
- 1 tsp vanilla extract
- 1 Β½ cups all-purpose flour
- 2 tsp baking powder
- ΒΌ tsp baking soda
- ΒΌ tsp salt
- Optional: zest of 1 lemon or orange for flavor

- Preheat oven to 350Β°F (175Β°C). Lightly grease a loaf pan or 8-inch round cake pan and line with parchment paper.
- In a large bowl, whisk together:
- Yogurt
- Maple syrup (or sugar)
- Oil
- Lemon juice (or vinegar)
- Vanilla extract
- Citrus zest (if using)
- In a separate bowl, whisk:
- Flour
- Baking powder
- Baking soda
- Salt
- Gradually fold dry ingredients into wet until just combined. Do not overmix β a few small lumps are fine.
- Pour batter into prepared pan and smooth the top.
- Bake for 30β40 minutes, or until a toothpick inserted in the center comes out clean.
- Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
