Ingredients

  • 2 cups frozen pineapple chunks (fresh pineapple frozen overnight or pre-frozen is fine)
  • ½ cup unsweetened coconut milk (or any creamy plant milk like oat or cashew)
  • 1–2 tbsp maple syrup or agave (optional, to taste)
  • 1 tsp fresh lemon juice (for a slight tang)
  • ½ tsp vanilla extract (optional, for extra depth)
  • Pinch of salt (to enhance flavor)

Optional Garnishes:

  • Pineapple wedges or mint leaves
  • Shredded coconut
  • A drizzle of coconut cream

🍧 Instructions

1. Freeze Your Pineapple

If you’re using fresh pineapple, chop it into chunks and freeze for at least 4–6 hours or overnight. The colder and firmer the pineapple, the better the whip’s texture. Frozen pineapple is key to achieving that iconic, soft-serve-like consistency.

2. Blend to Whip

In a high-speed blender or food processor, combine the frozen pineapple chunks, coconut milk, lemon juice, vanilla extract, and a pinch of salt. Blend on high until the mixture is creamy, smooth, and fluffy. You may need to stop and scrape down the sides a few times, or add a splash more milk to get things moving.

Taste the mixture and add maple syrup or agave if needed—ripe pineapple is often sweet enough on its own, but adjust to your liking.

3. Serve Soft-Serve Style

For an authentic soft-serve presentation, transfer the whip to a piping bag fitted with a large star tip and pipe it into bowls or cones. Otherwise, simply scoop it into a bowl and enjoy immediately for the creamiest texture.

If you prefer a firmer, scoopable consistency (more like sorbet), you can freeze the whip for 30–60 minutes before serving.
