Vegan Cucumber radish salad

Ingredients:
- 2 medium cucumbers, thinly sliced
- 6-8 radishes, thinly sliced
- 1 small red onion, thinly sliced (optional)
- 1/4 cup fresh dill, chopped (or to taste)
- 2 tablespoons olive oil
- 1 tablespoon apple cider vinegar (or lemon juice)
- 1 teaspoon Dijon mustard
- 1 clove garlic, minced
- Salt and pepper to taste
Instructions:
- Prepare the Vegetables:
- Thinly slice the cucumbers and radishes. You can use a mandoline slicer for uniform slices.
- If using red onion, thinly slice it as well.
- Make the Dressing:
- In a small bowl, whisk together the olive oil, apple cider vinegar (or lemon juice), Dijon mustard, minced garlic, salt, and pepper.
- Assemble the Salad:
- In a large bowl, combine the sliced cucumbers, radishes, and red onion.
- Pour the dressing over the vegetables.
- Add the chopped fresh dill.
- Toss everything together until the vegetables are well coated with the dressing.
- Chill and Serve:
- Let the salad sit in the refrigerator for about 15-20 minutes to allow the flavors to meld.
- Serve chilled as a refreshing side dish.
Tips:
- For extra flavor, you can add a handful of chopped fresh herbs like parsley or mint.
- If you like a bit of sweetness, add a teaspoon of maple syrup or agave to the dressing.
- This salad pairs well with a variety of dishes, especially grilled vegetables or vegan burgers.
