Vegan Cucumber radish salad


  • 2 medium cucumbers, thinly sliced
  • 6-8 radishes, thinly sliced
  • 1 small red onion, thinly sliced (optional)
  • 1/4 cup fresh dill, chopped (or to taste)
  • 2 tablespoons olive oil
  • 1 tablespoon apple cider vinegar (or lemon juice)
  • 1 teaspoon Dijon mustard
  • 1 clove garlic, minced
  • Salt and pepper to taste


  1. Prepare the Vegetables:
    • Thinly slice the cucumbers and radishes. You can use a mandoline slicer for uniform slices.
    • If using red onion, thinly slice it as well.
  2. Make the Dressing:
    • In a small bowl, whisk together the olive oil, apple cider vinegar (or lemon juice), Dijon mustard, minced garlic, salt, and pepper.
  3. Assemble the Salad:
    • In a large bowl, combine the sliced cucumbers, radishes, and red onion.
    • Pour the dressing over the vegetables.
    • Add the chopped fresh dill.
    • Toss everything together until the vegetables are well coated with the dressing.
  4. Chill and Serve:
    • Let the salad sit in the refrigerator for about 15-20 minutes to allow the flavors to meld.
    • Serve chilled as a refreshing side dish.


  • For extra flavor, you can add a handful of chopped fresh herbs like parsley or mint.
  • If you like a bit of sweetness, add a teaspoon of maple syrup or agave to the dressing.
  • This salad pairs well with a variety of dishes, especially grilled vegetables or vegan burgers.
