Vegan Crunchy Slaw Recipe

🥕 Ingredients (Serves 2–3)
For the Salad:
- 1 cup green cabbage, shredded
- 1 cup red cabbage (optional), shredded
- 1 medium carrot, grated
- 1 small red onion, thinly sliced
- 1 small green bell pepper, julienned (optional)
- 1 small apple, thinly sliced (optional for sweetness & crunch)
For the Dressing:
- 2 tbsp extra virgin olive oil
- 1 tbsp apple cider vinegar (or lemon juice)
- 1 tsp Dijon mustard
- 1 tsp maple syrup or agave syrup
- Salt & pepper to taste
🥣 Instructions
- Prep the Veggies: Shred and slice all your salad ingredients and place them in a large bowl.
- Make the Dressing: In a small bowl, whisk together olive oil, apple cider vinegar, Dijon mustard, maple syrup, salt, and pepper.
- Combine: Pour the dressing over the veggies and toss until everything is well coated.
- Chill & Serve: Let it sit for 10–15 minutes for flavors to meld (optional). Serve cold.
