Vegan crunch wrap

ingridients

  • soak 1 cup of walnuts for AT LEAST 8 hours. I usually soak mine before I go to bed, and I let them soak until I cook dinner the next day
  • dice up half an onion and half a red pepper and sauté that in a skillet using your oil/butter of choice
  • Add the walnuts and taco seasoning of your choice to a food processor or blender and grind up the walnuts. I use a blender and it works just fine. Blend them until they’re in small crumbles BUT do not over blend. If you grind them up to much you’ll start making walnut butter.
  • take the walnuts out and then had a half cup of baby Bella mushrooms with more taco seasoning and blend them until they’re small crumbles just like the walnuts.
  • once your veggies are tender add the walnuts and mushrooms to your skillet and sauté them all together for 5-10
  • taste test and season to your preference
  • use the crumbles for hard or soft shell tacos, taquitos, quesadillas, crunch wraps, or whatever your taco loving heart desires. I always have salsa, Taco Bell mild sauce, and simple truth brand vegan sour cream to pair with whatever I make
