Vegan Cookie Bars
Ingredients:
1 3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/2 teaspoon salt
1/2 cup coconut oil, melted
1 cup brown sugar
1/4 cup almond milk (or any non-dairy milk)
1 teaspoon vanilla extract
1 cup vegan chocolate chips
Instructions:
Preheat your oven to 350°F (175°C). Grease a 9×9-inch baking dish and set aside.
In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
In a large mixing bowl, cream together the melted coconut oil and brown sugar until well combined. You can use a hand mixer or whisk for this step.
Add the almond milk and vanilla extract to the coconut oil mixture and mix well.
Gradually add the dry ingredients to the wet ingredients, stirring until just combined. Be careful not to overmix.
Fold in the vegan chocolate chips until evenly distributed throughout the dough.
Transfer the dough to the greased baking dish and press it down evenly using your hands or the back of a spoon.
Bake in the preheated oven for 20-25 minutes or until the edges are golden brown and a toothpick inserted into the center comes out clean.
Remove from the oven and let it cool in the baking dish for about 15 minutes. Then, transfer the cookie bars to a wire rack to cool completely.
Once cooled, slice the cookie bars into squares or rectangles and serve. Enjoy!
