Vegan cinnamon rolls


Ingredients: For the Dough:
4 cups all-purpose flour
1/4 cup granulated sugar
2 1/4 teaspoons instant yeast
1 teaspoon salt
1/2 cup vegan butter, melted
3/4 cup unsweetened almond milk, warmed
1/4 cup water
For the Filling:
1/2 cup vegan butter, softened
1/2 cup brown sugar
1 tablespoon cinnamon
For the Glaze:
1 cup powdered sugar
1/4 cup unsweetened almond milk
1/2 teaspoon vanilla extract
Instructions:
In a large mixing bowl, combine the flour, sugar, instant yeast, and salt. Mix well.
Add the melted vegan butter, warm almond milk, and water to the dry ingredients. Mix until well combined and a soft dough forms.
Knead the dough on a floured surface for about 5 minutes, until it’s smooth and elastic.
Place the dough in a lightly greased bowl and cover with a damp towel. Let it rise in a warm place for 1 hour, or until it doubles in size.
Preheat your oven to 375°F (190°C).
On a floured surface, roll the dough out into a large rectangle.
Spread the softened vegan butter over the dough, leaving a 1-inch border around the edges.
Mix together the brown sugar and cinnamon and sprinkle the mixture over the buttered dough.
Roll the dough tightly, starting from the long edge. Pinch the edges to seal.
Cut the dough into 12-15 rolls, using a sharp knife or dental floss.
Place the rolls in a lightly greased baking dish, cover with a damp towel, and let them rise for another 15-20 minutes.
Bake the cinnamon rolls in the preheated oven for 25-30 minutes, or until they are golden brown.
While the rolls are baking, prepare the glaze. In a mixing bowl, whisk together the powdered sugar, almond milk, and vanilla extract until smooth.
When the rolls are done, remove them from the oven and let them cool for a few minutes.
Drizzle the glaze over the warm cinnamon rolls.
