Vegan Chocolate Chip Cookies
Ingredients:
1 cup all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup vegan butter, softened
1/2 cup brown sugar, packed
1/4 cup granulated sugar
1 teaspoon vanilla extract
1/4 cup non-dairy milk (such as almond or soy milk)
1 cup vegan chocolate chips
Instructions:
Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper or lightly grease it.
In a medium-sized bowl, whisk together the flour, baking soda, and salt. Set aside.
In a separate large bowl, cream together the softened vegan butter, brown sugar, and granulated sugar until smooth and creamy.
Add the vanilla extract and non-dairy milk to the creamed mixture. Mix until well combined.
Gradually add the dry ingredients to the wet ingredients, mixing until a dough forms.
Fold in the vegan chocolate chips until evenly distributed throughout the dough.
Using a spoon or cookie scoop, drop rounded tablespoons of dough onto the prepared baking sheet, leaving some space between each cookie for spreading.
Bake in the preheated oven for 10-12 minutes, or until the edges are lightly golden brown
