1 can (15 oz) chickpeas (drained and rinsed) or about 1.5 cups cooked chickpeas
4 cups fresh spinach (washed and roughly chopped)
1 medium onion, finely chopped
2 garlic cloves, minced
1-inch piece fresh ginger, minced or grated
1 large tomato, chopped (or 1/2 can diced tomatoes)
1/2 cup coconut milk (or any plant-based milk)
1/2 cup vegetable broth (or water)
2 tbsp olive oil (or any oil of choice)
1 tsp cumin seeds
1 tsp ground turmeric
1 tsp ground coriander
1/2 tsp ground cumin
1 tsp garam masala (or curry powder)
1/2 tsp chili powder (adjust based on spice preference)
Salt & pepper, to taste
Lemon juice, a squeeze for garnish (optional)
Instructions:
Prepare the Base:
Heat the olive oil in a large pan or skillet over medium heat.
Once hot, add the cumin seeds and let them sizzle for about 30 seconds until fragrant.
Add the chopped onions and sauté until they become soft and translucent, about 5 minutes.
Add Garlic and Ginger:
Add the minced garlic and ginger to the pan. Stir for about 1 minute until fragrant.
Add Tomatoes & Spices:
Stir in the chopped tomatoes, turmeric, coriander, cumin, chili powder, and salt. Cook for 3-5 minutes until the tomatoes soften and break down into a sauce.
Chickpeas & Liquids:
Add the chickpeas to the pan, followed by the coconut milk and vegetable broth. Stir everything together, making sure the chickpeas are well coated in the spices.
Let the curry simmer on low for about 10-15 minutes, allowing the flavors to meld together. If it gets too thick, you can add a little more vegetable broth or water to reach your desired consistency.
Add Spinach:
Stir in the fresh spinach. It may seem like a lot, but it will wilt down quickly. Cook for another 3-5 minutes until the spinach is tender.
Finishing Touches:
Taste the curry and adjust the seasoning with more salt, pepper, or spices if needed. If you like a tangy finish, you can squeeze a little lemon juice on top.
Serve:
Serve your Vegan Chickpea Spinach Curry over rice, quinoa, or with some flatbread. Garnish with fresh cilantro or a sprinkle of chili flakes for a little extra kick!
