VEGAN CHEESEBURGER CASSEROLE !
Ingredients:
1 lb vegan ground beef
1 onion, chopped
1 green bell pepper, chopped
2 garlic cloves, minced
1 can diced tomatoes
1 can black beans, drained and rinsed
1 cup vegan cheddar cheese, shredded
1/4 cup vegan mayo
1/4 cup ketchup
2 tbsp mustard
1 tbsp Worcestershire sauce
1 tbsp paprika
1 tsp garlic powder
Salt and pepper, to taste
2 cups cooked macaroni or pasta of choice
Instructions:
Preheat oven to 375°F (190°C).
In a large skillet over medium-high heat, cook vegan ground beef until browned. Drain and set aside.
In the same skillet, sauté onion, green bell pepper, and garlic until softened.
Add the cooked vegan ground beef back to the skillet, along with the diced tomatoes, black beans, paprika, garlic powder, salt, and pepper. Stir well to combine and let simmer for 5-10 minutes.
In a small bowl, mix together vegan mayo, ketchup, mustard, and Worcestershire sauce.
In a large bowl, mix together the cooked pasta and the vegan ground beef mixture. Pour the sauce over the pasta and stir to combine.
Transfer the mixture to a 9×13 inch baking dish and top with shredded vegan cheddar cheese.
Bake for 20-25 minutes, or until the cheese is melted and bubbly.
Serve hot and enjoy!
