Ingredients (makes ~8 biscuits)
2 cups all-purpose flour
1 tbsp baking powder
1/2 tsp baking soda
1/2 tsp salt
1/4 cup cold vegan butter (e.g., Earth Balance), cubed
1/2 cup shredded vegan cheese (cheddar-style works well)
1/4 cup fresh chives, finely chopped
3/4 cup sourdough discard (unfed)
1/4โ1/3 cup unsweetened plant-based milk (as needed for moisture)
๐ฅฃ Instructions
Preheat oven to 425ยฐF (220ยฐC). Line a baking sheet with parchment paper.
Mix dry ingredients: In a large bowl, whisk together flour, baking powder, baking soda, and salt.
Cut in butter: Add cold vegan butter and use a pastry cutter or your fingers to mix until crumbly (pea-sized pieces).
Add cheese & chives: Fold in vegan cheese and chopped chives evenly.
Add sourdough & milk: Stir in sourdough discard and plant milk a little at a time until a shaggy dough forms. Donโt overmix.
Shape biscuits: Turn dough onto a lightly floured surface and gently pat into a 1-inch-thick round. Use a biscuit cutter or cup to cut out rounds.
Bake: Place on the prepared baking sheet and bake for 12โ15 minutes, or until lightly golden and firm.
Cool slightly & serve: Let cool for a few minutes. Best served warm with vegan butter or alongside soup!
