VEGAN CAULIFLOWER TATER TOTS

Ingredients:

  • 2 cups of grated fresh cauliflower
  • 1/4 cup of nutritional yeast
  • 2 tbsp of ground flax seeds
  • 6 tbsp of water
  • 1/4 tsp of garlic powder
  • Salt and pepper to taste
  • Oil for frying

Instructions:

  1. In a small bowl, whisk together the flax seeds and water to make a flax egg. Let it sit for about 10 minutes until thickened.
  2. In a large bowl, toss the cauliflower with the nutritional yeast, garlic powder, salt and pepper. Add the flax egg and mix well to combine.
  3. Preheat the oven to 400°F and line a baking sheet with parchment paper. Shape the cauliflower mixture into small tots and place them on the prepared baking sheet. Bake for 15 minutes or until firm and golden.
  4. Heat some oil in a skillet over medium-high heat. Fry the tots in batches until crisp and browned on all sides, turning occasionally. Drain on paper towels and serve hot with your favorite dipping sauce.
