🌯 Classic Vegan Bean & Rice Burrito

🛒 Ingredients:

  • Large flour or whole wheat tortillas (vegan-friendly)
  • 1 cup cooked rice (white, brown, or cilantro-lime rice)
  • 1 can black beans or pinto beans, drained and rinsed
  • 1 small onion, diced
  • 1 bell pepper, diced
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 1 tsp chili powder
  • Salt & pepper, to taste
  • 1 tbsp olive oil
  • 1 cup fresh salsa or pico de gallo
  • ½ cup corn kernels (fresh, frozen, or canned)
  • ½ cup fresh cilantro, chopped
  • Optional: vegan cheese, guacamole, or vegan sour cream

Instructions:

  1. Heat olive oil in a pan over medium heat. Sauté onion and bell pepper until softened (about 5 minutes).
  2. Add beans, corn, cumin, paprika, chili powder, salt, and pepper. Cook for another 5 minutes until heated through.
  3. Warm tortillas briefly in a pan or microwave.
  4. Assemble burritos by layering rice, bean mixture, salsa, cilantro, and optional toppings.
  5. Fold in the sides and roll up tightly. Serve with extra salsa or guacamole.

🌯 Roasted Veggie & Avocado Vegan Burrito

🛒 Ingredients:

  • Large tortillas (vegan-friendly)
  • 1 cup cooked quinoa or brown rice
  • 1 cup roasted veggies (zucchini, bell peppers, onions, sweet potatoes)
  • 1 ripe avocado, sliced
  • 1 cup black beans or chickpeas, rinsed
  • 1 handful fresh spinach or kale
  • Juice of ½ lime
  • 2 tbsp fresh cilantro, chopped
  • Salt and pepper, to taste
  • Optional: hot sauce or salsa verde

Instructions:

  1. Preheat oven to 425°F (220°C). Toss chopped veggies with olive oil, salt, and pepper; roast for 20-25 minutes until tender.
  2. Warm the quinoa or rice.
  3. Warm tortillas.
  4. Layer quinoa/rice, roasted veggies, beans, spinach, avocado slices, cilantro, and a squeeze of lime juice.
  5. Add hot sauce or salsa if desired. Wrap burrito and enjoy!
