🌯 Classic Vegan Bean & Rice Burrito
🛒 Ingredients:
- Large flour or whole wheat tortillas (vegan-friendly)
- 1 cup cooked rice (white, brown, or cilantro-lime rice)
- 1 can black beans or pinto beans, drained and rinsed
- 1 small onion, diced
- 1 bell pepper, diced
- 1 tsp cumin
- 1 tsp smoked paprika
- 1 tsp chili powder
- Salt & pepper, to taste
- 1 tbsp olive oil
- 1 cup fresh salsa or pico de gallo
- ½ cup corn kernels (fresh, frozen, or canned)
- ½ cup fresh cilantro, chopped
- Optional: vegan cheese, guacamole, or vegan sour cream
Instructions:
- Heat olive oil in a pan over medium heat. Sauté onion and bell pepper until softened (about 5 minutes).
- Add beans, corn, cumin, paprika, chili powder, salt, and pepper. Cook for another 5 minutes until heated through.
- Warm tortillas briefly in a pan or microwave.
- Assemble burritos by layering rice, bean mixture, salsa, cilantro, and optional toppings.
- Fold in the sides and roll up tightly. Serve with extra salsa or guacamole.
🌯 Roasted Veggie & Avocado Vegan Burrito
🛒 Ingredients:
- Large tortillas (vegan-friendly)
- 1 cup cooked quinoa or brown rice
- 1 cup roasted veggies (zucchini, bell peppers, onions, sweet potatoes)
- 1 ripe avocado, sliced
- 1 cup black beans or chickpeas, rinsed
- 1 handful fresh spinach or kale
- Juice of ½ lime
- 2 tbsp fresh cilantro, chopped
- Salt and pepper, to taste
- Optional: hot sauce or salsa verde
Instructions:
- Preheat oven to 425°F (220°C). Toss chopped veggies with olive oil, salt, and pepper; roast for 20-25 minutes until tender.
- Warm the quinoa or rice.
- Warm tortillas.
- Layer quinoa/rice, roasted veggies, beans, spinach, avocado slices, cilantro, and a squeeze of lime juice.
- Add hot sauce or salsa if desired. Wrap burrito and enjoy!
