🥧 Vegan Banana Cream Pie
🍌 Ingredients
For the Crust (2 options):
Option 1: Vegan Graham Cracker Crust
- 1½ cups vegan graham cracker crumbs (about 10–12 crackers)
- ¼ cup melted coconut oil or vegan butter
- 2–3 tbsp maple syrup or sugar
Option 2: Classic Vegan Pie Crust (pre-baked)
- 1 9-inch vegan pie crust (store-bought or homemade), pre-baked and cooled
For the Banana Custard Filling:
- 1/3 cup cornstarch
- ¾ cup organic cane sugar or coconut sugar
- 1/4 tsp salt
- 2¼ cups unsweetened non-dairy milk (almond, oat, or soy work best)
- ½ cup full-fat canned coconut milk
- 1 tbsp vegan butter or coconut oil (optional, for richness)
- 1½ tsp vanilla extract
- 2–3 ripe bananas, sliced
For the Whipped Topping:
- 1 tub vegan whipped topping (like So Delicious CocoWhip)
or - 1 can full-fat coconut milk (chilled overnight — use only the solid part), whipped with 2–3 tbsp powdered sugar and 1 tsp vanilla
👩🍳 Instructions
1. Prepare the Crust:
- Graham Cracker Crust: Preheat oven to 350°F (175°C). Mix crumbs, oil, and syrup/sugar. Press into a 9″ pie dish. Bake for 8–10 minutes. Cool completely.
- Regular Crust: If using a traditional vegan pie crust, blind bake it per package or recipe instructions, then let it cool.
2. Make the Banana Custard:
- In a medium saucepan, whisk together cornstarch, sugar, and salt.
- Slowly add the plant milk and coconut milk, whisking until smooth.
- Heat over medium, stirring constantly until it thickens into a pudding (about 8–10 minutes).
- Once thick, remove from heat. Stir in vegan butter (if using) and vanilla.
- Let it cool slightly (5–10 minutes), stirring occasionally to prevent skin from forming.
3. Assemble the Pie:
- Arrange a layer of sliced bananas on the bottom of the crust.
- Pour the custard over the bananas and smooth the top.
- Cover and chill in the fridge for at least 4 hours, preferably overnight, until fully set.
4. Top It Off:
- Once set, top with whipped coconut cream or vegan whipped topping.
- Garnish with more banana slices (add these right before serving to avoid browning) and optional shaved dark chocolate or toasted coconut.
