🥣 Vegan Apple Pie Yogurt Bowl

🍎 Ingredients
Base:
- 3/4–1 cup unsweetened vegan yogurt (coconut, almond, cashew, or soy – soy is highest in protein)
- 1–2 tbsp vanilla vegan protein powder (optional but boosts protein)
- 1/2 tsp cinnamon
- Splash of maple syrup (optional, to taste)
Apple Pie Topping:
- 1 small apple (chopped into small cubes, skin on or off)
- 1/2 tsp cinnamon
- 1/4 tsp nutmeg or pumpkin pie spice (optional)
- 1 tsp coconut oil or water (for cooking)
- 1–2 tsp maple syrup (optional)
- Pinch of salt
Crunchy Toppings:
- 2–3 tbsp granola or toasted oats
- 1 tbsp chopped walnuts or pecans
- 1 tsp chia or flax seeds
- Optional: drizzle of almond butter or peanut butter
🔥 Instructions
1. Prepare the apples:
- Warm version:
- Heat a small pan over medium heat with coconut oil or water.
- Add chopped apples, cinnamon, nutmeg, and salt.
- Cook for 5–7 minutes, stirring often, until soft and caramelized.
- Stir in maple syrup at the end (optional).
- Raw version:
- Toss chopped apples in cinnamon, nutmeg, and a little maple syrup or lemon juice. Let sit 5–10 mins to soften slightly.
2. Mix the yogurt base:
- In a bowl, whisk yogurt with cinnamon, protein powder, and maple syrup if using. Stir until smooth and fluffy.
3. Assemble the bowl:
- Pour yogurt into a bowl.
- Top with warm or raw apples.
- Add granola, nuts, seeds, and any extra toppings.
