Vegan Apple Cinnamon Crêpes

Ingredients
For the Crêpes:
- 1 cup all-purpose flour (or oat flour for gluten-free)
- 1 ¼ cup plant-based milk (almond, soy, or oat)
- 1 tbsp maple syrup or agave
- 1 tbsp melted coconut oil (or any neutral oil)
- ½ tsp vanilla extract
- ½ tsp cinnamon
- ¼ tsp salt
For the Apple Cinnamon Filling:
- 2 apples, peeled, cored, and thinly sliced
- 1 tbsp coconut oil
- 2 tbsp maple syrup
- 1 tsp cinnamon
- ½ tsp nutmeg (optional)
- 1 tsp lemon juice
For Garnish:
- Powdered sugar
- Chopped nuts (walnuts or pecans)
- Extra maple syrup
Instructions
1. Make the Crêpe Batter:
- In a mixing bowl, whisk together the flour, cinnamon, and salt.
- Add plant milk, maple syrup, vanilla, and melted coconut oil. Whisk until smooth. Let it rest for 10 minutes.
2. Prepare the Apple Cinnamon Filling:
- In a pan over medium heat, melt coconut oil and add apple slices.
- Stir in maple syrup, cinnamon, nutmeg, and lemon juice.
- Cook for 5-7 minutes until apples are soft and caramelized. Remove from heat.
3. Cook the Crêpes:
- Heat a non-stick pan over medium heat and lightly grease it.
- Pour ¼ cup of batter into the pan, swirling to spread evenly.
- Cook for 1-2 minutes until edges lift, then flip and cook for another 30 seconds.
- Repeat with the remaining batter.
4. Assemble & Serve:
- Fill each crêpe with warm apple cinnamon filling and fold.
- Garnish with powdered sugar, chopped nuts, and extra maple syrup.
