🌯 Vegan Air-Fried Bean & Veggie Flautas

🧄 Ingredients:

🌮 For the Filling:

  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 1 cup bell peppers, chopped (any color)
  • 1 cup zucchini or corn, chopped (optional but recommended)
  • 1 can (15 oz / 425g) black beans, rinsed and drained
  • 1/2 tsp cumin
  • 1/2 tsp smoked paprika
  • 1/2 tsp chili powder
  • Salt and pepper to taste
  • 1–2 tbsp lime juice
  • 1/4 cup fresh cilantro, chopped (optional)

🫘 Optional creamy addition:

  • 1/4 cup vegan cream cheese or mashed avocado (adds creaminess to filling)

🫓 For Assembly:

  • 8–10 small flour tortillas or corn tortillas (warm them to prevent tearing)
  • Light spray of oil for crisping
  • Toothpicks (optional, to hold rolls together while air frying)

🧑‍🍳 Instructions:

1. Sauté the veggies:

  • Heat oil in a skillet over medium heat. Add onions and cook until soft (3–4 mins).
  • Add garlic, bell peppers, and any other veggies like zucchini or corn. Sauté for 4–5 mins until tender.
  • Stir in black beans, spices, lime juice, salt, and pepper. Cook for another 2–3 mins, mashing some beans with the back of a spoon for texture.
  • Turn off heat and stir in cilantro and vegan cream cheese or avocado, if using. Let the filling cool slightly.

2. Assemble the flautas:

  • Warm tortillas to make them pliable (wrap in a damp towel and microwave for 30 seconds).
  • Place 2–3 tablespoons of filling down the center of each tortilla.
  • Tightly roll into a log, like a cigar. Place seam-side down and secure with a toothpick if needed.

3. Air fry:

  • Preheat air fryer to 375°F (190°C) for 3 minutes.
  • Lightly spray flautas with oil and place in a single layer in the basket (don’t overcrowd).
  • Air fry for 8–10 minutes, flipping halfway, until golden brown and crispy.

4. Serve:

  • Remove toothpicks (if used) and serve hot with:
    • Guacamole
    • Salsa or pico de gallo
    • Vegan sour cream
    • Lime wedges
    • Fresh chopped cilantro or jalapeños

🌶 Make It Your Way:

  • Add protein: Toss in some cooked lentils, TVP, or vegan crumbles.
  • Spicy kick: Add chopped jalapeños or chipotle peppers in adobo to the filling.
  • Nut-free: No nuts used in the base recipe.

🧊 Storage & Reheating:

  • Fridge: Store leftovers in an airtight container for up to 3 days.
  • Reheat: Air fry again at 350°F for 5 mins or until crispy.
