Vanilla Custard Cream Squares (Low- Carb)

Ingredients:

For the Crust:

  • 1 1/2 cups almond flour
  • 1/4 cup granulated erythritol (or another low-carb sweetener of your choice)
  • 1/4 cup melted butter
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon salt

For the Custard Filling:

  • 4 large eggs
  • 1/2 cup granulated erythritol (or another low-carb sweetener of your choice)
  • 2 cups unsweetened almond milk
  • 1/4 cup heavy cream
  • 1 tablespoon vanilla extract
  • 1/4 cup coconut flour (for thickening)
  • Pinch of salt

Instructions:

1. Prepare the Crust:

  1. Preheat your oven to 350°F (175°C).
  2. In a medium bowl, combine the almond flour, granulated erythritol, melted butter, vanilla extract, and salt. Mix until well combined and the mixture resembles coarse crumbs.
  3. Press the mixture evenly into the bottom of an 8×8-inch baking pan lined with parchment paper.
  4. Bake for 10 minutes, then remove from the oven and let cool while you prepare the custard filling.

2. Prepare the Custard Filling:

  1. In a medium bowl, whisk together the eggs and granulated erythritol until smooth.
  2. In a medium saucepan, heat the unsweetened almond milk and heavy cream over medium heat until it starts to simmer. Do not let it boil.
  3. Slowly pour the hot almond milk mixture into the egg mixture, whisking continuously to prevent curdling.
  4. Stir in the vanilla extract, coconut flour, and a pinch of salt until the mixture is well combined and smooth.
  5. Pour the custard filling over the pre-baked crust.

3. Bake the Custard Squares:

  1. Bake in the preheated oven for 30-35 minutes, or until the custard is set and the top is golden brown.
  2. Remove from the oven and let it cool completely in the pan on a wire rack.

4. Serve:

  1. Once completely cooled, lift the custard squares out of the pan using the parchment paper. Cut into squares.
  2. You can refrigerate the squares for a few hours or overnight to enhance the texture and flavor.

Optional Topping:

  • A sprinkle of powdered erythritol or a dollop of whipped cream can add a little extra sweetness and presentation.
