🧁 Ultramel Scones Recipe

Ingredients:

  • 7 cups cake flour
  • 7 teaspoons baking powder
  • 1½ cups sugar
  • 4 eggs
  • 500 ml (2 cups) Ultramel custard
  • 250 g margarine or unsalted butter, softened (about 1 cup)
  • 1 teaspoon vanilla essence (optional)
  • Pinch of salt

Instructions:

1. Preheat & Prep:

  • Preheat your oven to 180°C (350°F).
  • Grease a baking tray or line it with baking paper.

2. Mix Dry Ingredients:

  • In a large mixing bowl, sift together:
    • 7 cups cake flour
    • 7 teaspoons baking powder
    • Pinch of salt
  • Add the sugar and mix well.

3. Rub in the Butter:

  • Add the softened butter or margarine.
  • Rub it into the flour mixture using your fingertips until it resembles breadcrumbs.

4. Whisk Wet Ingredients:

  • In a separate bowl, lightly beat the 4 eggs.
  • Mix in the Ultramel custard and vanilla essence (if using).

5. Combine Wet & Dry:

  • Pour the wet mixture into the dry ingredients.
  • Mix gently until a soft dough forms. Do not overmix — stop once everything is combined.

6. Shape the Scones:

  • Lightly flour your hands and working surface.
  • Pat the dough out to about 2–3 cm thick.
  • Cut into desired shapes using a round cutter or a knife.

7. Bake:

  • Place on the tray, leaving space between each scone.
  • Brush the tops with a little extra Ultramel or egg for a golden finish.
  • Bake for 20–25 minutes, or until risen and golden brown.
