Turkey, Bacon and Avocado Taquitos (keto + low carb)

Ingredients:
- 8 low-carb tortillas
- 1 lb cooked turkey, shredded
- 8 slices of cooked bacon, crumbled
- 2 avocados, diced
- 1 cup shredded cheddar cheese
- 1/2 cup sour cream
- 1/2 cup salsa (optional, for serving)
- 1 tbsp olive oil
- Salt and pepper to taste
- Fresh cilantro, chopped (optional, for garnish)
Instructions:
- Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- Prepare Filling: In a bowl, combine the shredded turkey, crumbled bacon, diced avocado, and shredded cheddar cheese. Season with salt and pepper to taste.
- Assemble Taquitos: Lay out a low-carb tortilla and place a spoonful of the filling mixture in the center. Roll up the tortilla tightly around the filling and place it seam-side down on the prepared baking sheet. Repeat with the remaining tortillas and filling.
- Brush with Oil: Lightly brush the tops of the taquitos with olive oil. This will help them get crispy in the oven.
- Bake: Bake in the preheated oven for about 15-20 minutes, or until the taquitos are golden brown and crispy.
- Serve: Serve the taquitos hot with a side of sour cream and salsa. Garnish with fresh cilantro if desired.
