Turkey, Bacon and Avocado Taquitos (keto + low carb)

Ingredients:

  • 8 low-carb tortillas
  • 1 lb cooked turkey, shredded
  • 8 slices of cooked bacon, crumbled
  • 2 avocados, diced
  • 1 cup shredded cheddar cheese
  • 1/2 cup sour cream
  • 1/2 cup salsa (optional, for serving)
  • 1 tbsp olive oil
  • Salt and pepper to taste
  • Fresh cilantro, chopped (optional, for garnish)

Instructions:

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. Prepare Filling: In a bowl, combine the shredded turkey, crumbled bacon, diced avocado, and shredded cheddar cheese. Season with salt and pepper to taste.
  3. Assemble Taquitos: Lay out a low-carb tortilla and place a spoonful of the filling mixture in the center. Roll up the tortilla tightly around the filling and place it seam-side down on the prepared baking sheet. Repeat with the remaining tortillas and filling.
  4. Brush with Oil: Lightly brush the tops of the taquitos with olive oil. This will help them get crispy in the oven.
  5. Bake: Bake in the preheated oven for about 15-20 minutes, or until the taquitos are golden brown and crispy.
  6. Serve: Serve the taquitos hot with a side of sour cream and salsa. Garnish with fresh cilantro if desired.
