Triple Chocolate Cheesecake Bars

Ingredients:

For the Crust:

  • 1 1/2 cups chocolate cookie crumbs (you can use Oreo cookies with filling removed)
  • 1/4 cup granulated sugar
  • 1/2 cup unsalted butter, melted

For the Cheesecake Layer:

  • 16 oz (2 blocks) cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream

For the Chocolate Layer:

  • 1 cup semi-sweet chocolate chips
  • 1/2 cup heavy cream

Instructions:

  1. Preheat the Oven: Preheat your oven to 325°F (160°C). Grease or line a 9×9-inch baking pan with parchment paper, leaving an overhang for easy removal.
  2. Make the Crust: In a medium bowl, combine the chocolate cookie crumbs, sugar, and melted butter until well mixed. Press the mixture evenly into the bottom of the prepared baking pan. Bake for 10 minutes, then remove from the oven and set aside.
  3. Make the Cheesecake Layer: In a large mixing bowl, beat the softened cream cheese and sugar until smooth and creamy. Add the eggs, one at a time, mixing well after each addition. Mix in the vanilla extract and sour cream until smooth and combined. Spread the cheesecake mixture evenly over the baked crust.
  4. Make the Chocolate Layer: In a microwave-safe bowl or using a double boiler, melt the semi-sweet chocolate chips and heavy cream together until smooth, stirring occasionally. Pour the melted chocolate mixture evenly over the cheesecake layer.
  5. Bake: Bake the bars in the preheated oven for 35-40 minutes, or until the edges are set and the center is slightly jiggly. Remove from the oven and let cool completely at room temperature.
  6. Chill: Once cooled to room temperature, refrigerate the cheesecake bars for at least 4 hours or overnight until fully set.
  7. Serve: Use the parchment paper overhang to lift the bars out of the pan. Cut into squares and serve chilled. Optionally, you can garnish with whipped cream, chocolate shavings, or fresh berries.
