1️⃣ Make the Bread (if homemade)
- Preheat oven to 350°F (175°C).
- Mix almond flour, baking powder, and salt.
- Add eggs, olive oil, and almond milk. Mix until smooth.
- Pour into small lined loaf pan.
- Bake 25–30 minutes. Cool completely before slicing.
2️⃣ Prepare the Topping
- Mix olive oil and minced garlic.
- Stir in diced tomato, basil, salt, and pepper.
- Let sit 5–10 minutes for flavors to blend.
3️⃣ Assemble
- Toast bread slices lightly.
- Spoon tomato mixture over warm bread.
- Sprinkle Parmesan if desired.
- Serve immediately.
