Teriyaki Chicken and Pineapple Foil Packets

Ingredients (Serves 4):
- 1 ½ lbs boneless skinless chicken breasts or thighs, cut into 1-inch cubes
- 1 ½ cups fresh pineapple chunks
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 small red onion, chopped
- 1 cup teriyaki sauce (store-bought or homemade)
- 2 tbsp olive oil
- 1 tsp garlic powder
- Salt and pepper, to taste
- Optional garnish: green onions, sesame seeds

Instructions:
1. Prep:
- Preheat grill or oven to 400°F (200°C).
- Tear 4 large sheets of heavy-duty foil (or double up standard foil for strength).
2. Mix Ingredients:
- In a large bowl, combine chicken, pineapple, bell peppers, onion, teriyaki sauce, olive oil, garlic powder, salt, and pepper. Toss well to coat everything.
3. Assemble Packets:
- Divide the mixture evenly between foil sheets.
- Fold the foil over the mixture and seal the edges tightly to form packets.
4. Cook:
- Grill: Place foil packets on the grill, cover, and cook for 15–18 minutes, flipping once halfway through.
- Oven: Place packets on a baking sheet and bake at 400°F for 20–25 minutes.
- Air Fryer (Optional): Cut packets to fit the basket. Cook at 375°F for 15–18 minutes. You may need to cook in batches.
5. Serve:
- Carefully open packets (watch for steam!), garnish with green onions and sesame seeds if desired. Serve over rice or noodles for a full meal.
