🍍 Tender Caramelized Beef with Pineapple

For the beef:

  • 1 lb (450g) beef sirloin or flank steak, thinly sliced against the grain
  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tsp cornstarch
  • 1 tbsp oil (for cooking)

For the sauce:

  • 1 tbsp soy sauce
  • 1 tbsp fish sauce (or more soy sauce if preferred)
  • 2 tbsp brown sugar (or palm sugar)
  • 1 tbsp rice vinegar or lime juice
  • 1/4 cup water or beef broth

Other ingredients:

  • 1 cup fresh or canned pineapple chunks (drained if canned)
  • 1 small onion, sliced
  • 2–3 cloves garlic, minced
  • 1 tsp grated fresh ginger (optional)
  • 1 small red chili, thinly sliced (optional, for heat)
  • 1 tbsp oil (for sautΓ©ing)
  • Chopped scallions or cilantro for garnish

1. Marinate the beef (5–10 min)

In a bowl, mix sliced beef with:

  • 2 tbsp soy sauce
  • 1 tbsp oyster sauce
  • 1 tbsp brown sugar
  • 1 tsp cornstarch

Let it sit while you prep the other ingredients. (This helps tenderize and flavor the beef.)


2. Make the caramelized sauce

In a small bowl, combine:

  • 1 tbsp soy sauce
  • 1 tbsp fish sauce
  • 2 tbsp brown sugar
  • 1 tbsp rice vinegar
  • 1/4 cup water or broth
    Stir and set aside.

3. Cook the beef

  • Heat 1 tbsp oil in a pan or wok over medium-high heat.
  • Add the marinated beef in batches (don’t overcrowd the pan), and sear until browned and just cooked. Remove and set aside.

4. SautΓ© aromatics

  • In the same pan, add a little more oil if needed.
  • Add onion, garlic, and ginger (if using). SautΓ© until fragrant and onions soften.

5. Caramelize & combine

  • Add pineapple chunks and stir-fry for 2–3 minutes until slightly caramelized.
  • Pour in the sauce and bring it to a simmer.
  • Return the beef to the pan, tossing everything together until the sauce thickens and glazes the beef and pineapple.

6. Finish & serve

  • Taste and adjust (add more sugar, fish sauce, or vinegar to balance).
  • Garnish with scallions or cilantro.
  • Serve hot with steamed jasmine rice or noodles.
