β Ingredients
For the beef:
- 1 lb (450g) beef sirloin or flank steak, thinly sliced against the grain
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp brown sugar
- 1 tsp cornstarch
- 1 tbsp oil (for cooking)
For the sauce:
- 1 tbsp soy sauce
- 1 tbsp fish sauce (or more soy sauce if preferred)
- 2 tbsp brown sugar (or palm sugar)
- 1 tbsp rice vinegar or lime juice
- 1/4 cup water or beef broth
Other ingredients:
- 1 cup fresh or canned pineapple chunks (drained if canned)
- 1 small onion, sliced
- 2β3 cloves garlic, minced
- 1 tsp grated fresh ginger (optional)
- 1 small red chili, thinly sliced (optional, for heat)
- 1 tbsp oil (for sautΓ©ing)
- Chopped scallions or cilantro for garnish

1. Marinate the beef (5β10 min)
In a bowl, mix sliced beef with:
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tbsp brown sugar
- 1 tsp cornstarch
Let it sit while you prep the other ingredients. (This helps tenderize and flavor the beef.)
2. Make the caramelized sauce
In a small bowl, combine:
- 1 tbsp soy sauce
- 1 tbsp fish sauce
- 2 tbsp brown sugar
- 1 tbsp rice vinegar
- 1/4 cup water or broth
Stir and set aside.
3. Cook the beef
- Heat 1 tbsp oil in a pan or wok over medium-high heat.
- Add the marinated beef in batches (donβt overcrowd the pan), and sear until browned and just cooked. Remove and set aside.
4. SautΓ© aromatics
- In the same pan, add a little more oil if needed.
- Add onion, garlic, and ginger (if using). SautΓ© until fragrant and onions soften.
5. Caramelize & combine
- Add pineapple chunks and stir-fry for 2β3 minutes until slightly caramelized.
- Pour in the sauce and bring it to a simmer.
- Return the beef to the pan, tossing everything together until the sauce thickens and glazes the beef and pineapple.
6. Finish & serve
- Taste and adjust (add more sugar, fish sauce, or vinegar to balance).
- Garnish with scallions or cilantro.
- Serve hot with steamed jasmine rice or noodles.
