Tea loaf in air fryer

Ingredients:

  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp baking soda
  • 1/4 tsp salt
  • 1/2 cup granulated sugar
  • 1/2 cup milk (you can use dairy or plant-based milk)
  • 1/4 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • 1/2 cup mixed dried fruits (such as raisins, cranberries, chopped apricots)
  • 1/4 cup chopped nuts (such as walnuts, pecans, almonds)

Instructions:

  1. Preheat your air fryer to 320°F (160°C) for 5 minutes.
  2. In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until well combined.
  3. In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until smooth.
  4. Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
  5. Fold in the mixed dried fruits and chopped nuts until evenly distributed throughout the batter.
  6. Grease a loaf pan that fits into your air fryer basket, then pour the batter into the pan and spread it out evenly.
  7. Place the loaf pan into the preheated air fryer basket. Cook at 320°F (160°C) for 25-30 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
  8. Once done, carefully remove the loaf pan from the air fryer and let the tea loaf cool in the pan for about 10 minutes.
  9. After cooling slightly, remove the tea loaf from the pan and let it cool completely on a wire rack before slicing and serving.
