Tea loaf in air fryer

Ingredients:
- 1 cup all-purpose flour
- 1 tsp baking powder
- 1/2 tsp baking soda
- 1/4 tsp salt
- 1/2 cup granulated sugar
- 1/2 cup milk (you can use dairy or plant-based milk)
- 1/4 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- 1/2 cup mixed dried fruits (such as raisins, cranberries, chopped apricots)
- 1/4 cup chopped nuts (such as walnuts, pecans, almonds)
Instructions:
- Preheat your air fryer to 320°F (160°C) for 5 minutes.
- In a large mixing bowl, whisk together the flour, baking powder, baking soda, salt, and sugar until well combined.
- In another bowl, whisk together the milk, vegetable oil, egg, and vanilla extract until smooth.
- Gradually add the wet ingredients to the dry ingredients, stirring until just combined. Be careful not to overmix.
- Fold in the mixed dried fruits and chopped nuts until evenly distributed throughout the batter.
- Grease a loaf pan that fits into your air fryer basket, then pour the batter into the pan and spread it out evenly.
- Place the loaf pan into the preheated air fryer basket. Cook at 320°F (160°C) for 25-30 minutes, or until a toothpick inserted into the center of the loaf comes out clean.
- Once done, carefully remove the loaf pan from the air fryer and let the tea loaf cool in the pan for about 10 minutes.
- After cooling slightly, remove the tea loaf from the pan and let it cool completely on a wire rack before slicing and serving.
