Taco Stuffed Shells

Ingredients:

For the shells:

  • 1 ½ cups shredded mozzarella cheese
  • 2 tbsp almond flour
  • 1 tsp taco seasoning (optional)

For the filling:

  • ½ lb (250g) ground beef or turkey
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp cumin
  • 1 tsp paprika
  • ½ tsp chili powder
  • Salt & pepper to taste
  • ¼ cup sugar-free salsa
  • ½ cup shredded cheddar cheese

Toppings (Optional):

  • Sour cream
  • Chopped cilantro
  • Diced avocado
  • Jalapeños

Instructions:

🔹 Make the Cheese Shells:
1️⃣ Preheat oven to 375°F (190°C).
2️⃣ Line a baking sheet with parchment paper. Place small piles (about 2 tbsp each) of shredded mozzarella, flattening them slightly.
3️⃣ Bake for 5-7 minutes until bubbly and golden around the edges.
4️⃣ Let them cool for 1 minute, then gently lift and drape over a rolling pin or small cup to form a shell shape. Let them set.

🔹 Prepare the Filling:
5️⃣ Heat olive oil in a pan over medium heat. Add ground beef, breaking it apart as it cooks.
6️⃣ Add garlic powder, onion powder, cumin, paprika, chili powder, salt, and pepper. Stir well.
7️⃣ Once browned, mix in salsa and cook for another 2 minutes. Remove from heat.

🔹 Assemble & Bake:
8️⃣ Fill each cheese shell with the taco meat mixture and place them in a greased baking dish.
9️⃣ Sprinkle shredded cheddar on top and bake for 5 minutes until the cheese melts.

🔹 Serve & Enjoy!
🔟 Top with sour cream, cilantro, avocado, or jalapeños. Serve hot!
