Sweet Potato Stuffed Fried White Oreos
Ingredients
For the Sweet Potato Filling:
1 cup mashed sweet potato (cooked and cooled)
2 tablespoons brown sugar
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon vanilla extract
For the Oreo Stuffing:
12 White Oreos (or golden Oreos)
For the Batter:
1 cup all-purpose flour
1 tablespoon cornstarch
1 tablespoon granulated sugar
1 teaspoon baking powder
1/2 teaspoon salt
1 cup milk
1 teaspoon vanilla extract
1 large egg
For Frying:
Vegetable oil (enough for deep frying)
For the Glaze:
1 cup powdered sugar
2-3 tablespoons milk
1/2 teaspoon vanilla extract
Instructions
1. Prepare the Sweet Potato Filling:
In a small bowl, mix the mashed sweet potato, brown sugar, cinnamon, nutmeg, and vanilla extract until smooth.
Set aside.
2. Stuff the Oreos:
Gently separate the white Oreos into two halves.
Place about 1 teaspoon of the sweet potato mixture on one half and gently press the other half back on top.
Ensure they are sealed but do not overfill.
Repeat for all 12 Oreos. Chill them for 10 minutes in the refrigerator to firm up.
3. Prepare the Batter:
In a large bowl, whisk together the flour, cornstarch, sugar, baking powder, and salt.
Add the milk, vanilla, and egg, whisking until smooth and slightly thickened.
4. Fry the Oreos:
Heat about 2 inches of oil in a heavy-bottomed skillet or deep fryer to 350°F (175°C).
Dip each stuffed Oreo into the batter, coating it completely, and let excess drip off.
Carefully place the battered Oreo into the hot oil. Fry for about 1-2 minutes per side until golden brown.
Use a slotted spoon to remove the Oreos and place them on a paper towel-lined plate to drain excess oil.
5. Make the Glaze:
In a small bowl, whisk together the powdered sugar, milk, and vanilla extract until smooth.
Drizzle the glaze generously over the warm fried Oreos.
