sweet potato fritters with black bean salsa
Ingredients
6 Tbsp aquafaba (chickpea water)
2 tbsp plain flour
1/4 tsp ground allspice
250g sweet potato cleaned and coarsely grated
2 spring onions
Salsa
2 spring onions
1/2 x 400g can black beans ( drained and rinsed)
150g cherry tomatoes
1 small avocado
1 mild chilli
1 lime
2 tbsp chopped coriander
Method
Mix the dry ingredients with the aquafaba then stir in the sweet potato and onion,season well
Make into patties and shallow fry for around 5 mins each side
Finely chop all the ingredients stir in with the black beans and lime juice and enjoy
