Swedish Apple Cake

Ingredients You’ll Need

2 large apples (Granny Smith or Honeycrisp)

1 ½ cups all-purpose flour

1 tsp baking powder

½ tsp salt

1 tsp cinnamon

½ tsp cardamom (optional, for extra Scandinavian flavor)

¾ cup granulated sugar

2 eggs

½ cup milk

1 tsp vanilla extract

For the Topping:

¼ cup brown sugar

½ tsp cinnamon

2 tbsp butter, melted

Sliced almonds (optional, for crunch)

Step-by-Step Instructions

1. Preparing the Apples

Peel, core, and thinly slice the apples.

Toss them with a little cinnamon and sugar to enhance their natural sweetness.

2. Making the Batter

Preheat oven to 350°F (175°C).

Grease a 9-inch cake pan or springform pan.

In a bowl, whisk together flour, baking powder, salt, cinnamon, and cardamom.

In another bowl, whisk melted butter and sugar until creamy.

Add eggs, one at a time, beating well after each addition.

Stir in milk and vanilla extract.

Gradually mix in the dry ingredients until just combined.

3. Assembling the Cake

Pour half of the batter into the greased cake pan.

Arrange half of the apple slices on top.

Pour the remaining batter over the apples.

Layer the rest of the apples on top in a circular pattern.

Mix brown sugar, cinnamon, and melted butter.

Drizzle over the top of the cake.
