🧾 Ingredients

  • 2 cups unsweetened almond milk (or low-fat milk if preferred)
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 3 tbsp erythritol or monk fruit sweetener (adjust to taste)
  • 2 tbsp cornstarch
    (For stricter low-carb: replace with 1 tsp xanthan gum OR 1½ tsp agar-agar)
  • 1 tsp vanilla extract
  • Optional: sugar-free chocolate sprinkles for topping

👩‍🍳 Instructions

  1. Mix dry ingredients
    In a saucepan, whisk sweetener and cornstarch (or chosen thickener).
  2. Add liquids
    Slowly whisk in almond milk and cream until smooth.
  3. Cook
    Heat on medium, stirring constantly.
    Cook until thick and creamy (about 5–7 minutes).
    It should coat the back of a spoon.
  4. Add vanilla
    Turn off heat and stir in vanilla.
  5. Set
    Pour into a glass dish. Let cool, then refrigerate for 2–3 hours until firm.
  6. Serve
    Top with sugar-free chocolate shavings or a sprinkle of cinnamon.
