Stuffed Pepper Soup

Ingredients:
- 1 lb ground beef (or turkey)
- 1 large onion, diced
- 1 green bell pepper, diced
- 1 red bell pepper, diced
- 1 yellow bell pepper, diced
- 2 cloves garlic, minced
- 1 can (14.5 oz) diced tomatoes
- 1 can (6 oz) tomato paste
- 4 cups beef or chicken broth
- 1 cup cooked rice (white or brown)
- 1 tsp dried oregano
- 1 tsp dried basil
- 1/2 tsp paprika
- Salt and pepper to taste
- 1 tbsp olive oil
- Optional: shredded cheese or sour cream for garnish
Instructions:
- Brown the Meat:
In a large pot, heat olive oil over medium heat. Add the ground beef (or turkey) and cook, breaking it apart with a spoon, until browned and fully cooked. Remove any excess fat. - Sauté the Veggies:
Add the diced onion, green bell pepper, red bell pepper, and yellow bell pepper to the pot. Cook for about 5-7 minutes, until the vegetables soften. Add the garlic and cook for another minute until fragrant. - Add the Liquids and Seasonings:
Stir in the diced tomatoes, tomato paste, beef or chicken broth, oregano, basil, paprika, salt, and pepper. Bring to a boil, then reduce heat to low. Let the soup simmer for about 20-30 minutes, allowing the flavors to meld together. - Add the Rice:
Stir in the cooked rice and continue to cook for another 5 minutes, until the rice is heated through. - Taste and Adjust Seasoning:
Taste the soup and adjust the seasoning if needed with more salt, pepper, or herbs. - Serve:
Ladle the soup into bowls. Optionally, top with shredded cheese or a dollop of sour cream for added flavor.
Tips:
- For a heartier soup, you can add additional vegetables like corn or zucchini.
- If you prefer a spicier soup, try adding a diced jalapeño or a pinch of red pepper flakes.
- For a vegan version, use plant-based ground meat and vegetable broth.
