Stuffed Mashed Potato Nests

Ingredients
For the Potato Nests:
- 2 cups mashed potatoes (cooled, not too soft)
- 1 egg
- 1/4 cup grated Parmesan cheese
- 1/4 cup shredded cheddar cheese
- 1/4 cup chopped green onions (optional)
- Salt and pepper to taste
For the Filling:
- 1/2 cup shredded chicken, ham, or cooked bacon
- 1/2 cup shredded mozzarella or cheddar
- 2 tbsp sour cream or cream cheese (optional for creaminess)
- Chopped herbs (parsley or chives), for garnish

Instructions
1. Preheat Oven or Air Fryer
- Oven: 400°F (200°C)
- Air Fryer: 375°F (190°C)
2. Prepare the Potato Nest Base
In a bowl, combine:
- Mashed potatoes
- Egg
- Parmesan
- Shredded cheddar
- Salt, pepper, and green onions
Mix until smooth but firm.
3. Form the Nests
- Use a muffin tin or silicone cups.
- Grease lightly.
- Scoop about 2–3 tablespoons of the potato mixture into each cup.
- Use the back of a spoon to press and shape into a nest (make a well in the center).
4. Bake or Air Fry
- Oven: Bake for 15–20 minutes until lightly golden.
- Air Fryer: Air fry for 10–12 minutes until edges are crisp.
5. Add Filling
In each nest, add a spoonful of your filling mixture (meat + cheese + optional sour cream). Top with more cheese.
6. Final Bake
Return to oven or air fryer for an additional:
- Oven: 5–7 minutes
- Air Fryer: 3–5 minutes
Until the cheese is melted and bubbly.
7. Garnish and Serve
Sprinkle with chopped herbs and serve warm.
