stuffed avocado with chicken:
Ingredients:
- 2 large avocados
- 1 cup cooked chicken breast, shredded or diced
- 1/4 cup red bell pepper, finely chopped
- 1/4 cup cucumber, finely chopped
- 1/4 cup cherry tomatoes, quartered
- 2 tbsp red onion, finely chopped
- 2 tbsp fresh cilantro, chopped
- 1/4 cup feta cheese, crumbled (optional)
- Juice of 1 lime
- 2 tbsp olive oil
- Salt and pepper, to taste
- Pinch of red pepper flakes (optional)
Instructions:
- Prepare the Avocados:
- Cut the avocados in half lengthwise and remove the pits. Scoop out a little bit of the flesh from each half to create more space for the filling. Reserve the scooped out flesh in a bowl.
- Prepare the Filling:
- In a mixing bowl, combine the cooked chicken breast, red bell pepper, cucumber, cherry tomatoes, red onion, and cilantro.
- Add the reserved avocado flesh to the bowl.
- Drizzle the lime juice and olive oil over the mixture.
- Season with salt, pepper, and red pepper flakes (if using). Mix well to combine.
- Assemble:
- Divide the filling evenly among the avocado halves, packing it gently into the hollowed-out centers.
- Serve:
- Sprinkle crumbled feta cheese on top (if using).
