stuffed avocado with chicken:

Ingredients:

  • 2 large avocados
  • 1 cup cooked chicken breast, shredded or diced
  • 1/4 cup red bell pepper, finely chopped
  • 1/4 cup cucumber, finely chopped
  • 1/4 cup cherry tomatoes, quartered
  • 2 tbsp red onion, finely chopped
  • 2 tbsp fresh cilantro, chopped
  • 1/4 cup feta cheese, crumbled (optional)
  • Juice of 1 lime
  • 2 tbsp olive oil
  • Salt and pepper, to taste
  • Pinch of red pepper flakes (optional)

Instructions:

  1. Prepare the Avocados:
    • Cut the avocados in half lengthwise and remove the pits. Scoop out a little bit of the flesh from each half to create more space for the filling. Reserve the scooped out flesh in a bowl.
  2. Prepare the Filling:
    • In a mixing bowl, combine the cooked chicken breast, red bell pepper, cucumber, cherry tomatoes, red onion, and cilantro.
    • Add the reserved avocado flesh to the bowl.
    • Drizzle the lime juice and olive oil over the mixture.
    • Season with salt, pepper, and red pepper flakes (if using). Mix well to combine.
  3. Assemble:
    • Divide the filling evenly among the avocado halves, packing it gently into the hollowed-out centers.
  4. Serve:
    • Sprinkle crumbled feta cheese on top (if using).
