Ingredients

  • 16 oz (2 blocks) cream cheese, softened
  • 1/2 cup granulated sugar
  • 2 large eggs

  • 1 cup graham cracker crumbs

Directions

  1. In a large bowl, beat the softened cream cheese and granulated sugar until smooth.
  2. Add eggs one at a time, mixing well after each addition.
  3. Mix in the vanilla extract and sour cream until combined.
  4. In another bowl, whip the heavy cream until stiff peaks form, then gently fold it into the cream cheese mixture.
  5. In a separate bowl, combine graham cracker crumbs, crushed freeze-dried strawberries, melted butter, and sugar. Mix well.
  6. Press the crumb mixture into the bottoms of mini cheesecake cups or a muffin tin lined with liners.
  7. Pour the cheesecake mixture over the crust and fill each cup to the top.
  8. Refrigerate for at least 4 hours or until set.
