Spinach + Feta Cookies (Spanakopita Cookies) 🥬🧀

Ingredients (12–14 cookies)

  • 1 package (10 oz) frozen spinach, thawed and squeezed very dry
  • ¾ cup crumbled feta cheese
  • ¾ cup cottage cheese (blended smooth for creaminess)
  • 2 large eggs
  • ½ cup oat flour (or blended oats)
  • ¼ cup grated parmesan cheese
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ½ tsp dried dill (classic spanakopita flavor)
  • ½ tsp black pepper
  • ½ tsp baking powder
  • 1 tbsp olive oil

Optional for extra protein:

  • 2 tbsp unflavored protein powder or extra parmesan

Instructions

  1. Preheat oven
    • Set oven to 375°F / 190°C.
    • Line a baking tray with parchment paper.
  2. Prepare the spinach
    • Thaw spinach completely.
    • Squeeze out as much liquid as possible using a towel or cheesecloth.
  3. Mix the batter
    In a bowl combine:
    • spinach
    • feta
    • cottage cheese
    • eggs
    • oat flour
    • parmesan
    • garlic powder, onion powder, dill, pepper
    • baking powder
    • olive oil
    Mix until a thick batter forms.
  4. Shape the cookies
    • Scoop about 1½ tablespoons of mixture per cookie.
    • Place on the baking tray and gently flatten.
  5. Bake
    • Bake 18–22 minutes until golden and firm.
  6. Cool slightly
    • Let cool for 5 minutes before serving.

For the whole batch:

  • Spinach: ~6 g
  • Feta: ~15 g
  • Cottage cheese: ~20 g
  • Eggs: ~12 g
  • Parmesan: ~8 g

Total: ~60 g protein per batch
➡️ ~5 g protein per cookie
