24 large white mushrooms, cleaned and stems removed
1 tablespoon olive oil
1 small onion, finely chopped
2 cloves garlic, minced
1 (10-ounce) package frozen chopped spinach, thawed and well-drained
1/2 cup mayonnaise
1/2 cup sour cream
1 cup grated Parmesan cheese
1 cup shredded mozzarella cheese
1 teaspoon Worcestershire sauce
1/2 teaspoon dried oregano
Salt and black pepper, to taste
Fresh parsley, chopped, for garnish
Instructions:
1. Preheat the Oven:
Preheat your oven to 375°F (190°C).
2. Prepare the Mushrooms:
Clean the mushrooms and remove the stems. Set aside.
3. Prepare the Spinach Mixture:
In a skillet, heat olive oil over medium heat. Add chopped onions and garlic and sauté until softened.
Add the thawed and drained spinach to the skillet, cooking until any excess moisture has evaporated.
In a large bowl, combine the sautéed spinach, mayonnaise, sour cream, Parmesan cheese, mozzarella cheese, Worcestershire sauce, dried oregano, salt, and black pepper. Mix well.
4. Stuff the Mushrooms:
Spoon the spinach mixture into each mushroom cap, pressing it down slightly.
5. Bake:
Place the stuffed mushrooms on a baking sheet or in a baking dish.
Bake in the preheated oven for 18-20 minutes, or until the mushrooms are tender and the filling is golden and bubbly.
6. Garnish and Serve:
Remove from the oven and let them cool slightly.
Garnish with chopped fresh parsley before serving.
