Spinach Dip Stuffed Mushrooms Recipe.
Ingredients:
- 24 large white mushrooms, cleaned and stems removed
- 1 tablespoon olive oil
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 1 (10-ounce) package frozen chopped spinach, thawed and well-drained
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup grated Parmesan cheese
- 1 cup shredded mozzarella cheese
- 1 teaspoon Worcestershire sauce
- 1/2 teaspoon dried oregano
- Salt and black pepper, to taste
- Fresh parsley, chopped, for garnish
Instructions:
1. Preheat the Oven:
- Preheat your oven to 375°F (190°C).
2. Prepare the Mushrooms:
- Clean the mushrooms and remove the stems. Set aside.
3. Prepare the Spinach Mixture:
- In a skillet, heat olive oil over medium heat. Add chopped onions and garlic and sauté until softened.
- Add the thawed and drained spinach to the skillet, cooking until any excess moisture has evaporated.
- In a large bowl, combine the sautéed spinach, mayonnaise, sour cream, Parmesan cheese, mozzarella cheese, Worcestershire sauce, dried oregano, salt, and black pepper. Mix well.
4. Stuff the Mushrooms:
- Spoon the spinach mixture into each mushroom cap, pressing it down slightly.
5. Bake:
- Place the stuffed mushrooms on a baking sheet or in a baking dish.
- Bake in the preheated oven for 18-20 minutes, or until the mushrooms are tender and the filling is golden and bubbly.
6. Garnish and Serve:
- Remove from the oven and let them cool slightly.
- Garnish with chopped fresh parsley before serving.
