Diabetic-Friendly Soft Brioche Rolls (Low-Carb)

🧾 Ingredients

Dry Ingredients

  • 1 ½ cups almond flour
  • 2 tbsp coconut flour
  • 1 tbsp psyllium husk powder (for elasticity)
  • 2 tbsp erythritol or monk fruit sweetener
  • 1 ½ tsp instant yeast
  • ½ tsp salt

Wet Ingredients

  • 3 large eggs (room temperature)
  • ¼ cup warm unsweetened almond milk
  • ¼ cup melted unsalted butter
  • ½ tsp vanilla extract

👩‍🍳 Instructions

1️⃣ Activate Yeast

Mix warm almond milk, yeast, and a pinch of sweetener. Let sit 5–10 minutes until slightly foamy.

2️⃣ Mix Dough

  • In a bowl, combine almond flour, coconut flour, psyllium, sweetener, and salt.
  • Add eggs, melted butter, vanilla, and yeast mixture.
  • Mix until a soft dough forms. Let rest 5 minutes to thicken.

3️⃣ Shape

  • Divide into 6–8 balls.
  • Place on lined baking tray or in muffin tin for round rolls.
  • Cover and let rise in a warm place 30–45 minutes (they won’t double like regular brioche but will puff slightly).

4️⃣ Bake

  • Preheat oven to 175°C (350°F).
  • Brush tops with beaten egg for shine.
  • Bake 18–22 minutes until golden brown.

Cool slightly before serving.
